Baked Feta French Bread Bites

This is my latest obsession (mainly because it makes use of all the bread I bake), but it’s yummy, filling, and I don’t think it’s that bad for you, either…. it’s baked feta French bread bites!!

I make them with slices from the easy French bread I make at home, but store-bought bread works just fine, too. The goal is that it’s something that tastes delicious without taking a huge time commitment to make (because, at heart, I’m a lazy chef).

But, let’s get straight into it because I don’t believe in beating around the bush when it comes to recipes (you’re here for food, I’m here because I made food, let’s keep it short and sweet, shall we?):

How to Make Baked Feta French Bread Bites

This is a VERY simple recipe, but it’s a good one! I started doing this once my husband starting working from home with me and *ahem* guilted me into making sure I eat lunch everyday. I love it because it’s so simple and quick, while using the ingredients we already have one hand.

Over the last few months, we’ve become even more of an “ingredient” family if you wanna call it that, so making bread, keeping spices, and feta (which is also used on the homemade pizza and some pastas) makes it a no-brainer.

Baked Feta French Bread Bites

A yummy baked snack made with Feta cheese, French bread slices, and your favorite seasonings.
Prep Time 5 minutes
Cook Time 10 minutes
Servings 1 person

Ingredients
  

  • 3 Tbsp Feta Cheese
  • 2 Tbsp Salted Butter (or Olive Oil)
  • 3 Slices French Bread
  • 1 Tsp Seasonings (mix of salt, garlic powder, and basil)

Instructions
 

  • Preheat your oven to 410 F and prep a baking sheet with parchment paper or aluminum foil (if you don't have either, don't stress it, it's not required).
  • Spread your butter on your slices evenly, this is very much personal preference, but make sure one side is completely coated.
  • On the same side as the butter, sprinkle your seasonings! Again, this is to taste, but I like to be a bit generous with the basil, light on the salt, and in-between on the garlic.
  • Now add one tablespoon of your Feta cheese to each slice on the same side as your butter and seasonings.
  • Place in the oven to bake for 8-14 minutes depending on how crunchy or soft you'd like your bread. Your Feta will start to get those golden brown peaks at around 9-10 minutes.
  • Let cool slightly, but I've found these are best eaten warm!

There’s not much else to say, except I like to mix it up a bit by using my herb-seasoned French bread on occasion instead of my traditional! And I eat this a few times a week because it’s cheap (ya girl’s on a budget) and yummy.

Which also brings me to how I budget food for a family of 5 for just $130/week (and somehow we’re still finding creative ways to bring it down – crazy to think this all started with figuring out it was cheaper to DIY our own bread) AND we’re still getting good variety and healthy foods.
